Peppery watercress adds a little kick to this easy, vegan pesto.  Healthy fat from avocado adds richness to this oil-free sauce.  Toss it over Brown Rice Pasta, use it in a Zucchini Noodle Bowl or serve with Baked Falafel.

Ingredients

1 bunch watercress
1 bunch parsley
1/2 cup whole unsalted almonds
1/2 tsp. ground coriander
1/4 tsp. salt
1/2 cup water

Watercress Parsley Pesto

Procedure

Gather ingredients. 

To make the pesto: Chop off the watercress leaves from the stems. Do the same for the parsley. You can save the stems for vegetable stock or soups. 
Place almonds, watercress and parsley leaves, coriander, and salt in a food processor or blender. 
Add 1/4 cup of the water and puree. 
Add more water, as needed, to reach a chunky, spreadable consistency. 
Serve with grilled vegetables, Chickpea Falafel Cakes, or spread over grilled bread.

Chef's Tip: Make a big batch of this and freeze into "ice cube" portions.  Then, you have a quick pesto "flavor bullet" ready to go on top of cooked pasta for a quick weeknight meal.

Yield: 1 1/2 cups
