Ingredients

1/2 cup walnuts (54g)
1 1/2 cups mashed banana (300g), divided
3/4 cup dates (150g)
1/4 cup unsweetened applesauce (57g)
3/4 cup plain almond milk (6 oz)
2 teaspoons vanilla extract
1 cup spelt flour (140g)
1 cup brown rice flour (160g)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon

Procedure

Gather ingredients. Preheat oven to 350. 

Toast walnuts in 350F oven for about 10 minutes, until golden brown. Remove and let cool. 

For the wet ingredients: Combine 1 cup of the mashed banana, the dates, applesauce, almond milk, and vanilla in a microwave-safe container. Microwave for 2 minutes, to soften the dates. Set aside to cool slightly. 

For the dry ingredients: Sift together the spelt flour, brown rice flour, baking powder, baking soda, salt, and cinnamon. 
When the wet mixture has cooled slightly, after about 5 minutes, place into a blender. Puree until smooth
Combine the wet mixture with the sifted dry ingredients. Add the toasted walnuts and remaining 1/2 cup mashed banana. Fold together until well-combined. Pour into 2 lined loaf pans (or 4 mini loaves or 18 muffins). 

Baked at 350F:
25-30 min. for muffins
40-45 min. for mini loaves
60-70 min. for full-sized loaves

Check to make sure a toothpick can cleanly be inserted and removed. 
Let cool completely before slicing.

Chef''s Tips: Substitute 1/2 cup sunflower seeds or pumpkin seeds instead of the walnuts for a nut-free version.  One cup of mashed banana weighs about 300g.  For a consistently delicious recipe, measure everything by weight.  It's worth investing in a small digital scale to allow for more precise and easier measuring.
