Procedure

To soak the beans: Cover beans with a few inches of water and let soak overnight, or at least 4 hours.  Beans will double to triple in size after soaking!
To cook beans: Sweat onions and paprika over medium heat, covered, until paprika is aromatic and onions start to become translucent. Drain and rinse beans.  Add beans, garlic, bay leaf, and cover with a couple of inches of water.
Cover and bring to a boil.
When beans reach a simmer, skim off any foam -- this comes from their gasses -- not delicious
Reduce heat and simmer, partially covered, 40-60 minutes, until starting to fall apart.
Remove lid during the last minutes of cooking, if needed, to reduce the liquid.
Season with salt and serve.

Chef's Tips: If you want to speed this up, substitute dry beans for canned lima or cannellini beans.  For an extra kick, add a 1/4 tsp. chipotle powder during the cooking.
