Ingredients

1 Tbs flax meal (6.5g)
3 Tbs warm water (1.5 oz)
1/2 Tbs smoked paprika
1/4 tsp salt
2 cups raw whole almonds (140g, 4.9 oz)

Procedure

Preheat oven to 350. 

To make Flax "Egg": Combine flax and warm water. Set aside 5 minutes, until gooey and egg-like. 

To coat and roast Almonds: Combine almonds, flax "egg", smoked paprika and salt.  Stir well to coat.
Spread into a single layer on a baking sheet. Roast at 350F for 20 minutes. 
Remove from the oven, toss, and set aside to cool for 10-15 minutes. 

Serve and enjoy! 

Store on the counter for up to 2 weeks, or freeze for longer. 

Chef's Tip: Substitute 1 tsp. of the warm water for other liquid flavorings like vanilla, lemon juice, or liquid smoke.  For a nut-free version, use this same coating on edamame, green peas, or cooked fava beans
