Rosewater Galia Melon Healthy Mint Fresca

Light and refreshing, this drink uses sweet Galia melon and mint for bright, natural flavor.  A touch of rosewater adds a Middle Eastern twist.  Make this healthy, vegetarian, gluten-free, fat-free recipe in just minutes.  Perfect on its own, or mix with vodka or champagne for an impressive summer drink.

Ingredients

2 cups Galia melon (about 1/2 melon)
1 tbsp fresh mint
1 tsp. rosewater
1/2 cup sparkling water
Fresh mint, to garnish

Rosewater Galia Melon Healthy Mint Fresca

To make the Fresca: Peel and seed the melon. Cut the melon into large pieces. You'll need about 2 cups of melon for 2 drinks. 1 melon usually makes enough for 4-6 drinks. 
In a blender, combine the melon, fresh mint, and rosewater. Puree until smooth. 
Pour into a chilled glass. Top with 1/4 cup or so of sparkling water. 

Garnish with fresh mint and serve immediately. 

Chef's note: Serve this right away. The mint will start to oxidize and turn brown. You can also make this with honeydew or any other ripe, summer melon.
