Chef's Plant-Based Tip: Galia melon is super-sweet and tastes similar to honeydew.  You can use any melon in this recipe, though.  Red and yellow watermelon, like these from Seedling Farms, can be found at most local farmer's markets in the summer

Procedure

To make the Fresca: Peel and seed the melon. Cut the melon into large pieces. You'll need about 2 cups of melon for 2 drinks. 1 melon usually makes enough for 4-6 drinks.
In a blender, combine the melon, fresh mint, and rosewater. Puree until smooth.
Pour into a chilled glass. Top with 1/4 cup or so of sparkling water.

Garnish with fresh mint and serve immediately.

Chef's note: Serve this right away. The mint will start to oxidize and turn brown. You can also make this with honeydew or any other ripe, summer melon.
