Rosemary Garlic New Potatoes

This simple side dish combines the flavors of roasted garlic and rosemary with satisfying potatoes.  Use any colors of potatoes for a beautiful, healthy presentation.  This oil-free, fat-free recipe is great with Portabella Burgers or even as a Brunch side dish.

Ingredients

1.5 pound new potatoes (any color)
1/2 tbsp. dried rosemary
1 head garlic
1/8 tsp. salt
1/8 tsp. pepper

Procedure

Gather ingredients. Preheat your oven to 450 F. 

To roast the potatoes and garlic.: Wash and halve the potatoes. Toss the potatoes with the rosemary.
 Place the potatoes and garlic on a baking sheet and roast in the 450 F oven for 25 minutes. 
After 20 minutes, or when the garlic is well-browned, remove from the oven and let cool. 
Continue roasting the potatoes, stirring every 10-15 minutes, until well-browned and a knife easily slides in and out. 
Peel the garlic cloves and mash with a spoon. 

To finish the dish: Toss the roasted potatoes and rosemary with the mashed roasted garlic, salt, and pepper. 
Serve immediately. 

Chef's Tips: Use any color potatoes you like for this dish. You can even roast the potatoes in a medium-hot spot on your grill, stirring every 10-15 minutes.
