Three ingredients: plums, pears, and mint, make this naturally-sweet, sugar-free refreshing compote a healthy choice for dessert.  Serve warm for a light  vegan treat.  It also works great to dress up a Chia Parfait, Blueberry Pancakes, or swirl into oatmeal.  Simply delicious fruit.

2 red pears
2 red plums
2 tbsp chopped mint

Gather ingredients.  Core and dice pears and plums.
To make compote: Heat a large, wide pan over high heat. No oil needed. Add diced pears and plums to hot pan. Then, don't touch! Let the fruit caramelize without stirring.
Once the fruit is brown on the edges, add about 1/2 cup of water, enough to cover the bottom of the pan. Simmer fruit until soft, about 10 minutes. 
Once fruit is tender, but still has some bite, turn off the heat. Stir in the fresh mint. 
Serve on toast, in oatmeal, or just eat with a spoon.

Yields: About 1 1/2 cups
