Pineapple Salsa Simple Healthy Ingredients - Pineapple, Red Onion, Jalapeno, Cumin, Lime, Cilantro

Ingredients

1/4 medium red onion, minced
1 medium jalapeno, stemmed, seeded and minced
2 tablespoons cilantro, chopped
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon cumin
6 cups pineapple, diced (about 1 medium pineapple)

Procedure

Gather ingredients. 

To prepare the Salsa: Remove the core of the pineapple. Dice the pineapple into small, bite-sized pieces.
Seed and dice the jalapeno. 
Mince the red onion. 
Chop the cilantro, if needed. 
Combine the pineapple, jalapeno, red onion, and cilantro in a medium bowl. Add the lime juice, cumin, salt and pepper. 
Toss well to combine. 
The flavors will develop even more if allowed to sit for at least 15 minutes. 

Serve with sliced jicama, baked tortilla chips, or use as a topping on tacos, fajitas, or fiesta rice. 

Chef's Tip: For even more flavor, grilled the pineapple before dicing. This will give a smoky, charred flavor, perfect for summer.

Yield: 6 cups
