Peach Blackberry Gluten-Free, Vegan, Paleo Cobbler

This delicious, gluten-free cobbler uses a grain-free, Paleo topping for a crunchy texture over summer's sweet fruit.  Naturally-sweetened, this vegetarian dessert will satisfy even non-vegans.  Swap out with other stone fruits or use frozen peaches and berries for healthy flavor.

2 tsp tapioca starch
6 dates
1/2 tsp nutmeg
1 tsp vanilla
1 cup water
3 peaches, sliced (about 4-5 cups)
1 pint Blackberries (about 2 cups)
1 1/2 cup almond flour
1 large banana, mashed
1/4 cup almond milk

Gather ingredients. Preheat oven to 375F

To make the Peach Blackberry Filling: In a small microwave-safe container, combine the dates, tapioca starch, nutmeg, vanilla, and water. Microwave 30-45 seconds, just to soften the dates and activate the spices.  Transfer to a blender and puree until smooth. 
Slice the peaches in 1/2-inch thick slices.  In a medium bowl, combine the sliced peaches with the blackberries and the pureed date mixture.  Toss well to coat.  Transfer to a 9-inch baking dish. 

To make the Grain-Free topping: In a small bowl, combine the almond flour, banana, and almond milk. Mash up the banana until it's well-combined in the dough. Sprinkle on clumps of cobbler topping. 

Bake at 375F for 20-25 minutes, until crispy on top and peaches are tender. 

Chef's Tip: You can use this Grain-Free topping over any Cobbler. Try it over baked apples, blueberry cobbler, or strawberry rhubarb.

Yield: 1 9-inch cobbler
