Ingredients

2 cups raw Cashews
1 cup coconut flake*
1 ½ tsp Curry powder
¼ tsp salt

Procedure

To make the Curry Cashew mix:  Preheat your oven to 350.

In a small baking pan, combine the cashews, coconut flake, curry powder, and salt.  No need to add any extra oil.  Bake at 350 for 10 minutes.  Stir around to toss.  Bake another 5-7 minutes, until golden brown.

Remove from the oven and let cool 10 minutes.  Snack away!

Simply store in a bowl on the counter for up to 10 days.  Don’t cover for an extended period of time or the snack mix will lose it’s crunch.

Chef’s Trail-Mix Tip:  You can jazz this up into salty-sweet trail mix by add some of your favorite dried fruits and cereal.  After baking, combine the Cashew Crunch with a couple of cups of puffed brown rice or Kamut cereal.  Stir in a ¼ cup of dried fruit like golden raisins, currants, or chopped dried mango.  You’ll be snacking for days.
