Ingredients

1 1/2 tablespoons Creole Spice mix
2 teaspoons Coconut oil
2 tablespoons honey mustard
1/2 teaspoon Creole Spice mix

Procedure

Gather Ingredients. Preheat your oven to 425. Preheat a large baking sheet in the oven. 
To make wedges: Scrub sweet potatoes well. 
Cut in half and then cut on an angle, in 1/2-inch thick wedges. 
Combine wedges with Creole seasoning and 2 teaspoons coconut oil. 
Spread the seasoning wedges into a single layer on the pre-heated baking sheet. 
Roast 30-40 minutes, tossing every 10-12 minutes, until well-browned around the edges and done in the center. 
To make Creole mustard, simply stir in some of the Creole spice mix with a couple tablespoons of your favorite kind of mustard -- my preference is honey mustard. 
Serve potato wedges with Creole Mustard.

Chef's Tips: You can make potato wedges and mustard with a variety of spice blends: Taco (or Mexican) spices, Smoked Paprika, Chili powder, and Curry are all fun to try!
