Chocolate Banana "I-Scream!"

Keep some frozen bananas on hand and you can whip up this creamy, healthy vegan treat any time.  This easy recipe is free of refined sugars and syrups, but brings sweet satisfaction  for kids of any age.

Ingredients

4 medium ripe bananas
1/4 cup pitted dates
1 cup almond milk
2 tbsp roasted unsalted almond butter
1/4 cup good quality dark cocoa powder

Procedure

Gather ingredients
Soak dates in warm water at least 10 minutes, to soften
Cut bananas into chunks and freeze at least 4 hours 

To make the "I-Scream": Remove the bananas from the freezer, but keep bowl frozen for serving or leftovers
Squeeze the dates from the soaking liquid
Place the bananas, squeezed dates, and remaining ingredients in a food processor
Blend for about 1-2 minutes, scraping the sides as needed, until smooth
Serve immediately in chilled bowls 

Chef's Tips: For enjoying later, tightly cover the I-Scream with plastic and place back in the freezer for up to two hours. Or store in the freezer for up to a month.  Simply let thaw about 15-20 minutes before enjoying.  Add flavor twists by adding 1/2 tsp. cinnamon, ginger, espresso powder, or pumpkin pie spice mix.
