Ingredients

3 cups low-fat coconut milk (or any other drinkable non-dairy milk like almond, hemp, or soy) 
1/2 cup chia seeds
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon

Procedure

To make "Cream": Combine everything and stir well. 
Refrigerate overnight to let sit. It will thicken and become a pourable "cream". 
Serve over warm baked cinnamon apples, berry cardamom compote, or any other sweet warm treat.

Chef's Tip: Use your favorite drinking non-dairy milk.  If you want added sweetness, you can add date water (left from soaking dates in warm water), maple syrup, honey, or your other preferred sweetener.

Yields: About 4 cups
