Asian inspired, healthy broccoli pairs with roasted, crunchy cashews and tofu in this easy oil-free recipe. Serve this with brown rice for a gluten-free vegan dinner.
EASY Servings: 4 Ready In: 40 minutes
10 ounce extra-firm tofu block, drained
1 big broccoli crown (or 2-3 cups florets)
1/2 cup cashews
2 teaspoon low-sodium tamari

Gather ingredients. Preheat oven to 375.
To prepare ingredients: Cube tofu into bite-sized pieces
Cut broccoli into bite-sized florets
To roast: Place broccoli, tofu, and cashews on a large baking sheet. Keep separate, but make sure everything fits in a single layer.
Bake at 375.
After about 10 minutes, remove cashews. Toss the broccoli and tofu and place back in the oven to roast more.
After about 10 more minutes, remove broccoli. Toss the tofu and place back in to continue roasting.
When tofu is browned on the edges, remove. Combine with the broccoli, cashews, and tamari. Toss well.
Serve immediately...warm and crunchy
