5 Minute Lemon Tahini Potato Bowl

Back by Popular Demand, it's the 5 Minute Bowl, Round Two.

When you don't have the time, energy, or creativity to mess with cooking, this 5 Minute Bowl is just what you need.

This time, heirloom baby potatoes are my go-to ingredient.  These little guys cook super-fast IN YOUR MICROWAVE.  Did you know that?  

While the potatoes and broccoli cook, make the Lemon Tahini Dressing in a mason jar.  You'll have extra dressing to use all week on salads, grilled veggies, or for another 5 Minute Dinner Emergency.

Swap out with other frozen veggies like Brussels Sprouts, Cauliflower, Green Beans, or Peas.  Toss over baby spinach for an amped-up salad.

Easy, healthy, no-fuss dinner?  Done.

Here's what you need:

5 Minute Lemon Tahini Dressing:
2 Tbsp Tahini
1 Tbsp Miso paste
2 Tbsp Nutritional Yeast
1 lemon, zest and juice
2 Tbsp. water
Salt and pepper, to taste

For the Potato Bowl: 
5 or 6 baby potatoes (any color or variety)
1 1/2 cup frozen broccoli florets (or any other frozen veggie like Brussels Sprouts, Cauliflower, Green Beans, or Peas
