"Chef Katie, what can I make in 5 minutes? Without using a knife?"
This is one of the most repeated questions I hear. It cuts right to the root of the reality many of us face:
I want to be healthy. But I am limited by time, skill, or ideas.
Enter Chef Katie. I was up for the challenge.
Here is an Asian Noodle Bowl that you can make in just 5 minutes. Okay, yes, the water needs to be boiling, but you DON'T need a knife.
You might even have most of the ingredients already in your pantry: Soba noodles, peanut butter, ginger, red chili flake, tamari, rice vinegar, lime juice, and "mix-ins" (I use frozen edamame and a bag of bean sprouts. You can even use brown rice pasta noodles or whole wheat spaghetti.
This makes a great clean-out dish for using up frozen or leftover veggies.
5 Minute Asian Peanut Sauce:
2 tbsp. Peanut Butter
1 tbsp. Rice Vinegar
1/2 tsp. Lime juice
1 tbsp. Ginger, grated or minced
1 tbsp. Orange Juice (or pineapple)
1/8 tsp. Red chili flake
1/2 tsp. Tamari or Soy Sauce
For Noodle Bowl:
1 (2 oz) bundle Soba noodles
1/2 cup bean sprouts
1/4 cup shelled edamame
