5 Minute Chia Pudding Parfait

Chia seeds mix with almond milk for a creamy pudding, perfect for a breakfast parfait.  Top with fresh berries and slivered almonds for a healthy, gluten-free, vegan start to the day.  Chia is packed with omega-3 healthy fat and satisfying fiber, making an easy, nutritious snack.

5 Minute Chia Parfait

2 Tbs Chia seeds
1/2  cup almond milk (or any non-dairy milk)
1 dash of vanilla
1 dash of nutmeg, cinnamon, or pumpkin pie spice blend
5 strawberries
1 Tbs slivered almonds

To make the Chia pudding:  Combine the chia seeds, almond milk, vanilla, and nutmeg (or other spice) in a small bowl. Stir together then set aside for 5 minutes.
To make the Parfait:  Clean and slice the strawberries. 
After 5 minutes, the Chia mixture will thicken to a creamy pudding.  Top with the sliced strawberries and slivered almonds.

Chef's tip:  Use any fruit or nuts for this parfait.  Berries and almonds work well together but other tasty combinations include peaches and pecans, apples and walnuts, or even bananas and peanuts.  Toast the nuts to really amp up the flavor.
